Kimchi, Rice Cakes Go Global in Taste, Style

Korean cuisine’s representative dishes are continuing to evolve in order to suit global palates.

Rice cakes and the nation’s representative dish “kimchi” are becoming more varied in taste and shape.

Examples include a fusion-style cabbage and sesame leaf kimchi roll and "emperor kimchi," which is served in classic celadon and named as such because it was served only to emperors in the dynasty eras.

Other variations include frozen kimchi and even chocolate-covered kimchi, which goes well with wine.
